Allow setting a replacement default implementation in NGKeyValueCoding

This is primarily useful for those that are coming from WO and might depend on features wo don't have/don't want. For example, we might want to plain replace NGKeyValueCoding with NSKeyValueCoding so operators on the NS* collection classes work in templates.
