celo: add Celo Africa Q4 ecosystem projects for EC Indexing

This PR adds Q4 2025 projects from the Celo Africa ecosystem to the Celo taxonomy for indexing.

Summary of Changes

• Adds new Celo public repositories from recent hackathons and ecosystem growth.
• Primarily games, prediction markets, and MiniPay-enabled applications
