Update the repository to be a monorepo #362

As part of the plan to split the library into core functionalities that can be used in a node environment, would be great if the repository is converted to a monorepo in order to have everything in the same working environment but as separate packages.
Suggested solution 💡
- Create a "packages" folder with the split libraries.
- Update package.json to allow workspaces.
- Change the name of the packages to reflect submodules as @ThatOpen.
