ZJIT: Total Stats Extraction

Create a harness for ruby-bench that pulls all ZJIT stats rather than the key contributors to slowdown. After completion, create follow up tickets to use this harness with a yet-to-be-created diffing tool. We shouldn't limit data before feeding it to our diffing tool.
