[exporter/elasticsearch] Update OTEL Sem Conv version

Is your feature request related to a problem? Please describe.

The exporter is several versions behind the latest sem conv version. This prevents the exporter from using the package to reference the latest semconv attribute constants.

Describe the solution you'd like

Update the exporter to support both otel semconv from v1.22.0 and the latest v1.37.0. This will allow us to main backwards compatibility for deprecated fields and support new semconv attributes.

Describe alternatives you've considered

The alternative will be to only support one version at a time, periodically updating to the latest. This would require dropping deprecated attributes and using the newly defined attribute as a replacement. Example based on the current version would be to drop DeploymentEnvironmentKey and replace it with DeploymentEnvironmentNameKey
